Okay, so Southern Texas is having it's first winter season down around these parts in quite some time as I understand it. Now I for one am enjoying the cooler weather. And it's partly because around this time of year I am a big fan of eating chili. In fact I make a pretty mean northern chili from time to time.
However, I want to try this Texas style of chili with all the beef instead of hamburger and beans, Texans are always raving about. Yet everywhere I've gone for lunch and such which offers a chili on their menu, is just more of the same ground hamburger!?
Where the hell is this Texas chili with BEEF! :cuss:
Could it be that Houston isn't really a part of Texas?? :c

I like chili over rice. I've been in Texas most of my life and can't tell you where to go to get the mythical "Texas Chili". I think it is mostly homade. By the way YOU DON"T PUT BEANS IN CHILI ! :boxing: :pot:

You need to go to a chili cook-off. You can't win a cook off in Houston with beans.

You can get a good bowl of chili fron the "Texas Chili Parlor" on Lavaca St. in Austin. Although, it would be a pretty good ride for you to come over here and get it.

You can get a good bowl of chili fron the "Texas Chili Parlor" on Lavaca St. in Austin. Although, it would be a pretty good ride for you to come over here and get it.

Its been quite some time since I have eaten over there, so I really don't remember. But I do know it was a pretty good bowl of chili.

You were probably told by a yankee so I'm sure it goes back to some legend. Kinda like how we don't have automobiles in Texas, just horses.

Then there was a chili grind meat that was a course grind, and now with all the super markets in big stores hamber is the most common. I am about to buy a beef. I think I will ask for some chili meat and chili grind. When I do my venison that is how I grind my meat!! You were not misled!!!!! Ride Safe Ride Long. Coming from a family that is four time Texas state chili cookoff winners (back in the 80's), I can tell you this much..
If you are making competetive chili, then yes, you cube beef by hand. We used the toe of a well marbled brisket and flank steak. Just like any respectable Southern cook, the secret is low and slow. We would cook a pot of chili upwards of 20 hours. The beef would fall apart like good Carne Guisada. You gotta have the cubes NO BIGGER than 3/8". Real quick sear (like 700 degree flame for 30 seconds each side. No oil). Then put it in the crock pot and let her be. And for God's sake, keep those damn beans away from the chili :banghead: . We don't use filler here, only beef!! And the only thing to properly serve chili over is the bottom of the bowl. :lunch: .
Now if you are making just a regular pot of chili, use a good 80/20 ground sirloin. Be sure and only drain 1/2 of the grease. Grease is gooooood...
And pour a beer in your chili... ALWAYS!! :flag:

What ViciousNoob just said except sometimes I like to substitute beef with fresh venison. Cook it down until it's so thick it stands up when you plop a spoonful down on a plate. Then dive in with a tablespoon in one hand and a handful of jalapeƱo cornbread in the other hand.
Ain't today a great a great day for chili?
